We at Studio Banani are passionate about eating – that’s right: bananas. Whether baked in the kitchen, frozen and mixed as a milkshake<\/a> or simply between meals. What remains are the peels, which give off a great aroma when dried. So good, in fact, that Stefan Wiesner also uses the black, dehydrated shells in his “sausage workshop”<\/a> to cook sheep’s sausage. So we ask ourselves: how can we capture this variety of aromas and turn them into a new sensory experience? And does<\/a> a banana peel extract really smell like banana? <\/p>\n

Inspired by Harold McGee’s “Nose Dive”,<\/strong> Stefan Wiesner’s “Wurstwerkstatt” and the knowledge of modifiers that harmonize particularly well with banana, we head to the Banani laboratory. Here we extract fragrances from banana, spearmint and sheep’s wool and preserve them in alcohol. The resulting extracts are surprising and open up completely new worlds of fragrance<\/strong>. <\/p>\n
