The popularity of vegetarian and vegan diets has continued to grow in the pandemic – plant-based meals are also increasingly in demand in the delivery market. According to Lieferando, orders for vegan dishes in 2020 increased by 166 percent year-on-year in Germany. Vegetable dishes are not only aimed at vegetarians – on the contrary, most guests in top vegetarian restaurants are curious omnivores. And in view of the fact that, according to surveys, almost half of meat eaters would like to reduce their meat consumption in the future, a new culinary world of plant-based cuisine is opening up for restaurant operators. For this, however, cooks need specific know-how as well as imagination.
